Cdex is a very active and popular project listed on Sourceforge. This program is a Windows utility which can quickly extract digital audio tracks from a compact disc into files on the hard drive. The extracted audio tracks can be stored as WAV or MP3 (MPEG-1 Audio Layer-3) files and used as a backup, distributed, etc.
